Green Pepper ( Haree Mirch ), like black, is made from the unripe drupes. Dried green peppercorns are treated in a way that retains the green colour. Green Pepper is widely used in Thai cuisine. Their flavour has been described as spicy and fresh, with a bright aroma. Green pepper has an especially fresh and slightly fruity flavor. It is also the mildest of all the peppercorn varieties.
Green peppercorns are from the same plants as black but are picked before fully ripe and are typically soaked in brine before drying. Their flavor is slightly crisper and more herbal than black pepper. As a result, they are preferred in lighter dishes: sauces, salads, dressings, pastas, etc.
